How can I improve the texture of homemade oat cookies?

Achieving the perfect texture in oat cookies can be tricky. If your cookies are coming out soggy, try using rolled oats rather than instant oats, as instant oats absorb too much moisture too quickly. If they are turning out too dry or crumbly, try pulsing the rolled oats in a blender to create a coarse powder before mixing them into the batter, as this often results in a better hold and more uniform baking.
