Is it normal for my 8-month-old to suddenly refuse to be fed with a spoon?

It is very common for babies around 8 months to assert their independence by refusing to be fed with a spoon. This is often a sign they are ready to explore self-feeding or 'baby-led' eating. Instead of pressuring them, allow them to play with the food, use their hands, or handle a pre-loaded spoon themselves. Keep mealtime low-pressure, continue demand feeding for their milk requirements, and trust that they will consume enough as they grow accustomed to the new way of eating.
