Is it normal for a 6-month-old to not sit up unassisted yet?

Yes, many babies do not sit up independently by 6 months, and this is completely normal. To help build core strength, encourage plenty of floor time, tummy time, and practice propped sitting using your lap or a feeding pillow. You can also incentivize them to reach for toys placed just above shoulder height while they are in a supported sitting position.
